Apple pickin' and Apple Turkey Fingers


Over the weekend, my love semi-unexpectedly came home from a longer than anticipated trip. (Perhaps my ordering pizza for dinner that night lured him home. I'll definitely have to keep that trick up my sleeve the next time he's gone and his travel plans get thrown out the window.) Anyway, as is becoming tradition, we went to Fifers to pick some apples...but as a whole family this year.


While we were there wandering around the store, we picked up a recipe for Apple Turkey Fingers and figured we'd give it a try for dinner that night. We paired it with some roasted butternut squash and it was quite yummy and fit the bill for a very fall-like meal. I also have to add that this was a successful meal with the kiddo too, which is awesome since it has plenty of good-for-you stuff in it.


My apologies for not having a picture of our very autumn-esque meal. It was pretty and tasty. I guess you'll just have to take my word for it and try it out.

Apple Turkey Fingers

1 lb ground turkey
2 medium carrots
1 large apple (of course we used an apple we picked that day)
1-2 garlic clove(s)
1/2 small onion
1 egg, beaten
1/4C bran
1/2tsp dried thyme, crushed (I actually used only 1/4)
salt and pepper

Preheat broiler.

Place ground turkey in a large mixing bowl.

In a food processor or by hand, grate the carrot, apple, garlic, and onion. Add to bowl with turkey.

Add the egg, bran, thyme, salt, and pepper to the mixture. Mix all ingredients together.

Scoop mixture, about 1/4 C at a time (size of a large meatball) and roll into sausage shapes, placing on a broiling pan or greased cookie sheet as you go. Wet your hands periodically if it gets sticky.

Place in broiler and broil for 10-15 minutes on one side, then turn over and broil for another 5-10 minutes or until cooked through.

Enjoy!

Store together in a freezer bag or individually wrapped in foil.
