Last week a friend of mine told me about this different take on a grilled cheese sandwich that she had made. It sounded quite yummy and I decided we would have to try it soon.
That soon ended up being just a few days later.
It was one of those quiet days with little going on which is just ripe for a grilled cheese and tomato soup type of dinner.
Enter in the grilled cheese sandwich.
We had some fresh french bread left over from a previous meal, so that was our bread. Then we added swiss cheese, very thinly sliced Granny Smith apples, turkey, and another slice of swiss cheese to keep it all together. Um...can I say "yum"? We're not typically a family that is fond of fruit in main dish meals, but as long as the apple was thin, it was perfect.
Now for the soup, we've been on the hunt for a yummy but easy tomato soup that didn't come from the red and white can. We've tried a few and even liked a few, but they still weren't the "easy" that we were looking for.
I found SouleMama's Carrot Tomato Soup recipe about a month or so ago. I just knew these would be perfect with each other.
This soup is packed with lots of flavor and is so easy. It may sound a little work involved to roast your own tomatoes but its so worth the 10 minutes that it takes to prepare them to put in the oven.
Very good and so going in the "Definitely do this again" recipe pile.
