chicken salad sandwhiches

Last summer I was introduced to this incredibly easy and super yummy chicken salad. I was just getting into actually eating and enjoying apples, thanks to my sweet little girl who more or less convinced me to try them. The apples pair beautifully with the saltiness of the chicken, the creamy mayo, and the sweet craisins and is so easy and super quick to make. In fact, this was made the other day when the kiddo and I were running super late on getting home for lunch and nearing naptime and I had it up and ready in two minutes--which is about how long any other quick lunch would have taken.

This is one of those recipes where I don't have specific amounts to post in the recipe. Its really just a by sight and taste kind of thing. I generally get the croissants from Safeway because they're fluffy and yummy and quite likely not so good for you. (Side note, those same croissants are excellent heated up with a little Nutella added to it after.)

As for the canned chicken in the recipe, there's just something disgusting and cringe-worthy to me for some reason, yet I still buy it knowing its great in this recipe. But I honestly can't see any other kind of chicken that would be better for this specific recipe (if any of you have suggestions, I'm all ears). And really, once I get over the cringe-factor, I find that it does actually taste good, just like I remember...probably because of all the salt loaded into it. Needless to say, it doesn't find its way into my cart very often, but when it does, I enjoy the easiness and the tastiness. (I have tried rotisserie chicken in another chicken salad recipe in the past and was totally turned off by the greasiness it had...it really just didn't work.)

Now I must apologize for the poor croissant. My love asked me what I did to the poor thing as I really did butcher it. I'll spare you some of the other more revealing pictures of the things demise.

Chicken Salad Sandwiches
1 Granny Smith apple (sliced into thin bite size pieces)
2 small or 1 large can of canned chicken (use the fork to flake it)
a handful-ish of craisins
mayo (fat free works just fine) (maybe a couple of Tablespoons?)
croissants

**I also add some fresh sprouts and a slice of swiss cheese.

  2. You've been busy with the posts! So funny about the canned chicken, too - we used to eat it all the time growing up, and I really didn't mind the taste at all...now, it just seems really weird to me (but, I agree, I have no idea how to get that same taste!) The picture looks fantastic, though :)
