Mandarin Chicken Lettuce Wraps
This is a recipe I found when we were living in Valdosta, GA and adapted to our tastes. Per request, here's the basic recipe. As luck would have it, I just happened to get a good picture of tonight's dinner too which just makes this post even better. :)
Mandarin Chicken
2/3 C sugar
1/4 C soy sauce
1T lemon juice
1 tsp oil
1 tsp minced garlic
1/2 tsp minced ginger
1/4 C water
4 tsp flour
1 to 1 1/2 chicken breasts depending on the size (I generally do just 1)
Combine the sugar, soy sauce, lemon juice, oil, garlic, and ginger in a small saucepan. Combine the water with flour in a separate bowl and stir until dissolved. Add to saucepan and turn heat to high. Stir until it comes to a boil, then reduce heat and simmer 4-6 minutes or until thick. While that is simmering, cut the chicken into bite size pieces and cook. Then pour into the completed sauce.
I also make a side of jasmine rice which takes about 20 minutes to cook.
Shred a carrot or two.
Grab a few Boston Lettuce leaves.
Then make a nice little wrap by layering rice, chicken, and carrot. Oh, and bean sprouts are quite tasty on top too.
Green snap peas go well with this as a side.
